LSU studies crawfish because Louisiana exports thousands each year from farms and natural swamps. Crawfish are a healthy food eaten by people for hundreds of years. High in protein, low calories, lots of vitamins, a still natural food no added chemicals or hormones like the other meats. Seems a simple fresh water wash is fine, and straight tails are OK to eat. Not to mention the added vegetables are also good and healthy.
Weather affects the harvest of Crawfish in Louisiana. The unusual cold and " Polar Vortex" has hurt harvesting and shipping of crayfish from Louisiana. LSU Ag Center says when water temperature reached 60F Degrees crawfish become active.
"Well-below-average temperatures in January will influence the crawfish harvest significantly, according to LSU AgCenter researcher Ray McClain.
“Catch is related to water temperature. Cold weather cuts down on the catch, and extended cold weather negatively affects the growth rates of crawfish,” McClain said.
McClain said once water temperatures go much below 60 degrees, crawfish become less active. Crawfish will not feed well or move around and are less likely to become attracted to the bait in traps."
